Veronica Montfort

I remember I was ten years old, I had to go with my mum for errands, and the last stop was the dry cleaner – next to it was a new Gymnastics Academy.  I could see the girls flipping in the air, balancing on the beam, and I was magically attracted to gymnastics ever since.  That year, I was sitting in front of the TV for hours watching the Olympic Games, and my love for sports never ended until now.

I studied dietetics and nutrition in Mexico.  After a few years of experience in public health nutrition, which I enjoyed dearly, my passion brought me back to sports, and I was able to continue with postgraduate studies in England – first in Exercise Science and Health at the University of Essex, and later for my PhD in Pediatric Exercise Science at the University of Exeter where I focused on nutrition of young cyclists.  

I am proud that our nine-year-old already got his black belt in karate, and our five-year-old is a great karate girl, ballet dancer and wants to start with gymnastics “when the Coronavirus finishes”, as she says!

Through this platform, I would like to translate scientific research and provide tips for healthy eating.
